Quinoa Salad

Ingredients:

  • 1/2 c. dry Red Quinoa
  • 3 Tb. Olive Oil
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 C. Canned Chick Peas
  • 2/3 c. Canned Corn
  • 1/2 c. Feta Cheese
  • Dash of Peprika
  • Pinch of Cinnamon
  • Salt & Pepper to taste

Cook quinoa according to directions on box. While quinoa is cooking, dice peppers and place to the side. After quinoa is cooked, simply mix all the ingredients together. Add more or less spice to your liking. This dish can be served warm or chilled.

Black Bean Summer Salad

Ingredients:

  • 2 Cans Black Beans
  • 1 Can Corn
  • 1 Avocado
  • 2 Plum Tomatoes
  • 1 Red Pepper
  • 1 bunch Green Onions
  • 2 Cucumbers
  • 1 Lemon
  • Olive Oil
  • Cilantro
  • Salt & Pepper

This recipes is so easy.  Basically, just take all the veggies and dice them up.  Throw in the black beans and corn.  Add the juice of one lemon.  Season to your liking with Olive oil, cilantro, salt and pepper.  Done!  Easy, yummy, fresh and healthy:)
